Goat cheese, smashed raspberries, honey & thyme
Soft goat cheese is paired with tangy smashed raspberries, drizzled with honey and a bit of aromatic thyme. Today’s toast has those savory and sweet flavor contrasts we love. Smashing raspberries with a fork is the quickest shortcut jam ever and it pairs perfectly with the rich, salty notes of the goat cheese. Here, we’ve used a cheese with a layer of ash, but feel free to use any soft goat cheese you can find.
- 1 slice For the Love of Bread country sourdough batard, toasted
- handful fresh raspberries
- 50 grams soft goat cheese
- 1 tbsp honey
- 2 sprigs fresh thyme
Use a fork to smash the raspberries till they reach a jammy texture. Spread the goat cheese evenly on the sourdough slice and spoon the smashed raspberries on top. Drizzle with honey and finish with the thyme leaves. Enjoy!
