Marinated white beans on toast

No more boring beans on toast! Our marinated white beans are a flavor bomb with punchy vinegar, fresh herbs, garlic, shallots and lot’s of generous glugs of olive oil. These beans are great on our toasted sourdough, hearty and perfect for a tasty, vegan and almost effortless lunch or dinner.

cooking time: 30 minutes inactive, 15 minutes active

To marinate
• 1 can cannellini beans, drained and rinsed under water
• 1 shallot, finely sliced
• 1 clove of garlic, peeled and finely grated
• handful of fresh parsley, roughly chopped
• the leaves from 2 sprigs of fresh oregano, roughly chopped
• 11⁄2 tbsp apple cider vinegar
• 3 tbsp extra virgin olive oil
• a pinch of chili flakes
• 1/4 tsp salt

Place the beans in a bowl along with the shallot, garlic, parsley, oregano, apple cider vinegar, olive oil, chili flakes & salt. Mix till combined. Set aside to marinate for at least 30 minutes

To serve

  • For the Love of Bread organic country sourdough batard sliced, halved and toasted
  • extra virgin olive oil
  • marinated beans
  • fresh oregano leaves
  • sea salt
Place the sourdough toasts on a plate and drizzle with olive oil. Spoon the marinated beans and any reserved juices on top. Another drizzle of olive oil. Finish with oregano leaves and a sprinkle of sea salt. Enjoy!
