The Rotisserie Chicken Hack Sandwich
They said roast a whole chicken for one sandwich, they said it would be great, they said it will only take two hours. HA!
We love making everything from scratch as much as the next guy, but with busy schedules it’s just not always possible. So here we are proclaiming as loud as we can: WE ARE ALL ABOUT THAT ROTISSERIE CHICKEN LIFE. What’s not to love about picking up a perfectly cooked, crispy skinned, juicy bird made by someone else?
A rotisserie chicken is your blank canvas, do what you will and make it your own. We’re sharing one of our favorite ways to use rotisserie chicken in a sandwich with pickled onions, a creamy, zesty, spicy lime mayo and lots of colorful additions for crunch and bite. We were inspired by the bright flavors of the Vietnamese bánh mì, and while our version is definitely not authentic, it packs all the punchy flavors we love.
For the Quick Pickled Onions
- 1/2 of a small red onion, thinly sliced into rounds
- white grape vinegar
Place the red onion slices in a bowl and pour the white grape vinegar on top until the onions are completely submerged. Let sit for 15 minutes or longer
For the Spicy Lime Mayo
- 1 garlic clove, finely grated
- 1 tsp finely chopped fresh jalapeño
- 1 tsp finely chopped chives
- 2 tsp finely chopped cilantro
- zest & juice from 1/2 of a lime
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 tsp salt
Mix all of the ingredients in a bowl till combined
To assemble the sandwich
- 2 slices of For the Love of Bread organic country sourdough batard
- spicy lime mayo
- pulled chicken from a rotisserie chicken (skin & bones removed), about 100 grams for one sandwich
- quick pickled onions
- cucumbers, thinly sliced
- radishes, thinly sliced
- jalapeño, thinly sliced
- carrot shavings
- fresh cilantro
