Whipped Ricotta Toast with Nectarines & Raspberries

The Dubai Summer is here (yikes!) , which means we’re on the look out for refreshing fruits of the season. Ricotta is one of our favorite cheeses, and we whipped it with lemon zest, vanilla bean paste and honey for a dessert-like spread that reminds us of delicious cannoli filling. Spread it generously on our organic sourdough batard and top with juicy nectarines and plump raspberries for a fresh, vibrant toast that will have you dreaming of summer holidays in ten minutes flat.

cooking time: 10 minutes

For the Ricotta

  • 250 grams ricotta cheese
  • zest of 1 lemon
  • 1/2 tsp pure vanilla bean paste
  • 1 tbsp honey

Combine the ricotta cheese, lemon zest, vanilla bean paste and honey in a bowl. Use a whisk to aerate the ricotta till fluffy, smooth and light.

To assemble and serve

  • 2 thick slices of For the Love of Bread organic sourdough batard
  • whipped ricotta
  • 1-2 sweet nectarines, sliced
  • handful of raspberries, halved
  • honey for drizzling

Generously spread the whipped ricotta on top of the sourdough slices. Top with the nectarines, raspberries and drizzle with honey to finish.
